Dampfnudel is a German, Austrian, and Czech dessert that is a cross between a cake and a dumpling. It's fluffy, light, and pillowy soft, often served with a warm, sweet caramel sauce. The dough is made with yeast, flour, milk, egg yolks, sugar, sherry, salt, and vanilla, which is formed into balls and baked in a caramel sauce until golden brown. This recipe has been passed down for generations and is enjoyed throughout Europe.

Instructions

1.In a small bowl, dissolve yeast in 1/2 cup milk. Add 1 cup flour; mix well. Cover and let rise in a warm place until doubled, about 30 minutes.
2.In a large bowl, cream 1 cup butter and egg yolks until light and fluffy. Add the remaining milk, sugar, sherry, salt, vanilla, and yeast mixture; mix well. Stir in the remaining flour, mixing until a smooth dough forms.
3.Cover and let rise in a warm place until doubled, about 45 minutes. Meanwhile, combine sugar, water, and 1 tablespoon butter in a Dutch oven. Cook over medium heat until mixture turns a deep caramel color, stirring occasionally.
4.Gradually stir in the maple syrup, cream, and vanilla. Bring to a boil over medium heat, stirring constantly. Remove from heat and stir in remaining butter until melted.
5.For the dumplings, punch down dough. Roll into 20 balls. Arrange in a greased 13x9-in. baking dish. Pour caramel sauce over the top. Cover and let rise for 20 minutes. Preheat oven to 375°F. Bake until golden brown, about 35-40 minutes.
