Ingredients

3 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 cup butter , softened
1 cup white sugar
3 eggs
2 teaspoons lemon zest
1 teaspoon almond extract
1/2 cup toasted almonds , finely chopped
1 egg white

Instructions

1.In a bowl, mix flour and baking powder together and keep it aside.
2.In another bowl, using an electric mixer beat butter and sugar together until light and fluffy.
3.Add eggs one by one, and beat well after each addition.
4.Add lemon zest and almond extract to the mixture and beat again.
5.Gradually fold in the flour mixture and chopped toasted almonds to make a stiff dough.
6.Divide the dough into two parts and shape each part into a long flat log with 2 inches thickness.
7.Place the logs onto a greased baking sheet.
8.Brush the top of the logs with egg white.
9.Bake for 25-30 minutes or until the logs are light brown and firm. Remove from the oven and let it cool for 10 minutes.
10.Cut the logs into 1-inch thick slices and place them back on the baking sheet one by one. Bake again for 10-15 minutes or until the slices are golden brown and crispy.
11.Remove from the oven and transfer on a wire rack to cool completely.
