Ingredients

1 lb chicken breast , cut into 1 1/2-inch pieces
1/2 cup buttermilk
2 large garlic cloves , pressed
1/2 tablespoon fresh ginger , minced
1/2 teaspoon fresh ground black pepper ( to taste )
1/4 teaspoon sea salt
1/2 cup cornstarch ( substitute unbleached all-purpose flour )
4 cups canola oil , for frying
2 tablespoons peanuts , chopped for garnish
1 tablespoon green onion , chopped for garnish
1/4 cup cooking rice wine ( Shaoxing )
3 tablespoons rice vinegar
2 tablespoons low sodium soy sauce
1 tablespoon gochujang ( hot pepper paste )
1/4 cup honey ( to taste )
1/4 cup brown sugar
1 tablespoon sesame oil
2 large garlic cloves , pressed
1/2 tablespoon fresh ginger , minced
1/2 teaspoon fresh ground black pepper ( to taste )
Dakgangjeong, also known as Korean fried chicken, is a popular Korean dish that blends crispy fried chicken pieces with a sweet and spicy sauce. It's a perfect dish to share with friends and family on any occasion. Traditionally served as a bar snack in Korean taverns, Dakgangjeong has now become a staple dish in Korean cuisine and is enjoyed by people of all ages.

Instructions

1.In a large bowl, whisk buttermilk, garlic, ginger, black pepper, and sea salt. Add chicken and coat with marinade. Cover with plastic wrap and place in fridge for at least 30 mins or overnight.
2.In a separate bowl, mix cornstarch and 1/2 teaspoon sea salt. Dredge each chicken piece in cornstarch mixture, lightly shake off excess and place on a plate.
3.Heat canola oil in a large skillet or wok over medium-high heat (350 degrees F). Fry chicken pieces in batches until crispy and golden brown, approximately 3-4 minutes per batch. Remove each batch from skillet and place on a paper towel-lined plate.
4.In a small saucepan, whisk cooking rice wine, rice vinegar, soy sauce, gochujang, honey, brown sugar, sesame oil, garlic, ginger, and black pepper. Heat over medium-high heat until simmering.
5.Toss cooked chicken with sauce until each piece is coated in the sauce. Garnish with chopped peanuts and green onion. Serve hot.

PROS
