Ingredients

water
sea salt , to taste
1 lb chicken piece ( breast , legs , wings , whatever you want )
2 large onions , thinly sliced
1 1/2 cups basmati rice ( soaked )
khaliji mixed spice ( Gulf Spices ( Ibzar ) , I use a mix of that and Baharat Aka Middle East Mixed Spices - the Real Mix )
1 cinnamon stick
3 -4 partially open cardamom pods
1 teaspoon turmeric
chicken broth or water
Dajaj Fe Ga3ateh, also known as Chicken at the Bottom is a popular Middle Eastern dish that originated in Bahrain. As the name suggests, the chicken is cooked at the bottom of a pot, and the rice is cooked on top, allowing the flavors to blend together beautifully. The dish is usually served during family gatherings and special occasions. The use of mixed spices gives the dish a unique taste that is sure to leave you wanting more. Instructions

1.Boil water and add sea salt, add chicken and boil until cooked.
2.Remove chicken and keep aside.
3.Saute onions in the same pot until soft. Add mixed spices, cinnamon, and turmeric, saute for another 2 minutes.
4.Add basmati rice and cardamom, saute for two more minutes.
5.Add chicken broth or water, cover the lid and simmer on low heat.
6.Once the rice is almost done, place the chicken pieces on top of the rice, cover and continue cooking until the rice is fully cooked. Serve hot.
