Ingredients

2 tablespoons olive oil
1 large onion
4 garlic cloves , crushed
3 1/2 lbs chicken
1/2 teaspoon ginger
2 teaspoons cinnamon
1 teaspoon cardamom
1/2 teaspoon cumin
1/2 teaspoon aleppo pepper ( optional ) or 1/2 teaspoon cayenne pepper ( optional )
salt and pepper , to taste
1 1/2 tablespoons lemon juice
2 cups couscous , Lebanese-style
2 tablespoons butter

Instructions

1.In a large pot, heat olive oil over medium-high heat. Add onion and garlic, and sauté for 2-3 minutes until softened.
2.Add chicken to the pot and season with ginger, cinnamon, cardamom, cumin, aleppo pepper (or cayenne), salt and pepper. Cook for 5-7 minutes until chicken is browned on all sides.
3.Add 4 cups of water to the pot and bring to a boil. Reduce heat to low, cover, and let simmer for 45-50 minutes until chicken is fully cooked.
4.In a separate pot, cook couscous according to package instructions.
5.Once chicken is fully cooked, remove from pot and set aside. Stir lemon juice and butter into the remaining liquid in the pot, and cook for an additional 5-7 minutes until the sauce has thickened.
6.Serve chicken over a bed of couscous, topped with the thickened sauce.
