Ingredients

4 medium free range eggs
1 tablespoon salad cream
2 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
8 slices thin sliced brown bread
butter , softened , for spreading
salt and pepper

Instructions

1.Boil the eggs for 8-10 minutes until hard boiled.
2.Once cooled, peel the eggs and mash them using a fork in a bowl.
3.Add the salad cream, mayonnaise and chives to the bowl and mix well.
4.Add salt and pepper to taste.
5.Spread butter on one side of each slice of bread.
6.Spoon the egg mixture onto four slices of bread.
7.Close the sandwiches with the remaining slices of bread.
8.Use a sharp knife to cut the crusts off each sandwich.
9.Cut the sandwiches into small triangles.
10.Serve with a pot of freshly brewed tea.
