Dahl Puri is a popular vegetarian dish that originated in Trinidad and Tobago but is now enjoyed in various parts of the world. Traditionally, Dahl Puri consists of a spiced split pea filling wrapped in a fried dough shell, but this recipe offers a healthier twist by pan-frying the dough instead. This dish is perfect for those who are looking for a meatless meal that is still full of flavor and protein.

Instructions

.To make the filling, combine the chicken stock, split peas, chile pepper, garlic, turmeric, and cumin in a heavy saucepan.
.Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes or until the split peas are tender.
.Use a blender or immersion blender to puree the mixture until smooth.
.To make the puri, sift the self-rising flour into a large bowl.
.Add 2 tablespoons of the vegetable oil and the warm water, and stir until the dough comes together.
.Divide the dough into 16 equal pieces and roll each one into a ball.
.Use a rolling pin to roll each ball into a thin circle.
.Brush the top of each circle with the remaining tablespoon of vegetable oil, then fold the circle in half and press the edges together to seal.
.Heat a large skillet or griddle over medium heat.
.Cook each puri for 2-3 minutes on each side or until lightly browned and puffed.
.Serve the puri warm with the split pea filling inside.
