1 cup warm water
1/2 cup sugar
1 package yeast
1/2 cup instant mashed potatoes
1/2 cup warm water
1 teaspoon salt
1/2 cup shortening
2 eggs
2 cups flour
3 - 3 1/2 cups flour
Dad's Potato Rolls recipe is a family favorite that has been passed down for generations. These rolls are soft, fluffy and delicious, and they can be enjoyed on their own or as part of a meal. The mashed potatoes in the dough make them moist and tender while the yeast gives them just the right amount of rise. These rolls are perfect for sandwiches, burgers or to accompany a hearty soup. Instructions

1.In a bowl, dissolve the sugar in the warm water and add the yeast. Let the mixture stand for 10 minutes to proof.
2.In another bowl, mix the mashed potatoes, warm water, salt, shortening, and eggs until smooth.
3.Add the yeast mixture and 2 cups of flour to the potato mixture, stirring until well combined.
4.Gradually add enough remaining flour to form a soft dough. Knead the dough for about 8 minutes. Cover the dough with plastic wrap and let it rest for 10 minutes.
5.Preheat oven to 375°F (190°C).
6.Divide the dough into 24 equal parts and shape each into a smooth ball. Place the balls in a greased baking pan.
7.Cover the pan with a clean towel and let the rolls rise in a warm place until doubled, about 1 hour.
8.Bake the rolls for about 12-15 minutes, or until golden brown on top.
