Ingredients

1 1/2 cups basmati rice , cleaned , washed , soaked in water for 30 minutes and drained before using
6 cups water
1 inch cinnamon stick
4 green cardamoms
2 cloves
2 bay leaves
1/4 teaspoon turmeric powder
1 tablespoon oil
5 sprigs of fresh curry leaves
4 cloves garlic , peeled , washed and finely chopped
1 teaspoon mustard seeds
1 tablespoon cumin seed
1 green chili , washed , ends trimmed and the rest of the chilli should be chopped

Instructions

1.In a deep saucepan, boil 6 cups of water. Add cinnamon stick, green cardamoms, cloves, bay leaves, and turmeric powder. Stir well and bring to a boil again.
2.Add the washed and drained basmati rice. Stir and cook for 12-15 minutes or until the rice is almost done.
3.Strain the excess water and set aside the rice.
4.In another saucepan, heat oil on medium heat. Add fresh curry leaves, finely chopped garlic, mustard seeds, and cumin seeds. Stir well and sauté for 2-3 minutes.
5.Add chopped green chili and sauté for another 2 minutes.
6.Add the cooked rice in the pan and mix well.
7.Cover the saucepan with a tight lid and cook for 10 minutes on low heat.
8.Turn off the heat, let it rest for a few minutes, then open the lid and fluff the rice with a fork before serving.
