Ingredients

4 cups low-fat plain yogurt
1 cup sugar , ground
1/4 teaspoon cardamom powder
1/4 teaspoon ground nutmeg ( jaifal )
3 -5 saffron strands , soaked in
1 tablespoon of hot milk
2 tablespoons pistachios , finely chopped

Instructions

1.Line a fine mesh strainer with cheesecloth, and set over a large bowl.
2.Add the yogurt to the strainer and wrap the cheesecloth around the yogurt.

4.In a large bowl, add the strained yogurt and mix in the ground sugar, cardamom powder, and nutmeg.
5.Use a spoon to mix well and get a smooth and creamy texture.
6.Crush the saffron strands in a mortar and pestle, and then soak them in a tablespoon of hot milk for 5 minutes.
7.Add saffron and milk mixture to the bowl and stir well.
8.Cover and refrigerate for a few hours or until firm.
9.To serve, spoon the shrikhand in small bowls and garnish with chopped pistachios.
