1 1/2 kg leg of lamb
1 tomatoes , crushed
1 cup water
1 kg potato , peeled
500 g green beans
15 allspice , whole
2 garlic cloves
4 bay leaves
1 cup white wine
1/4 cup olive oil
salt and pepper
1 teaspoon sugar
1/2 cup risoni
200 g kefalotyri , cubed
The Slow Cooked Cypriot Lamb-Goat recipe is a traditional Cypriot dish that has been passed down from generation to generation. Known as Kleftiko, this dish was originally prepared by shepherds, who would salt and cover their lamb in a sealed container to keep it moist when cooked. This slow-cooked succulent lamb-goat dish is a versatile recipe that can be served with rice, green salad, or bread. Instructions

1.Preheat your oven to 160°C after ensuring your lamb is at room temperature.
2.Season both sides of the meat with salt and pepper.
3.Heat the olive oil in a large Dutch oven, adding the meat to brown on all sides, approximately 8 minutes.
4.Remove the meat from the pot and set it aside.
5.Now it's time to sauté onions and garlic for 5 minutes until they're fragrant and soft.
6.Add tomatoes, bay leaves, allspice, sugar, and water.
7.Now it's time to bring back the meat in the Dutch oven and add enough wine until the meat is halfway submerged.
8.Bring to boil, then reduce heat and simmer for 3 hours.
9.Add potatoes and green beans, then continue cooking for an additional 45 minutes.
10.Finally, sprinkle risoni and kefalotyri over the top, then return the dish to the oven for an additional 30 minutes, or until the cheese is melted and golden brown.
11.Serve hot!
