Ingredients

8 pints fresh milk , either goats or ewe or cow
1 teaspoon rennet or 1 teaspoon special cheese rennet
little salt , if desired
1 teaspoon mint

Instructions

1.Warm up the milk to 35C in a large pot.
2.Dissolve rennet in a little cold water and add it to the pot. Stir well.
3.Cover pot and leave it at room temperature overnight.
4.The next morning, the milk should have separated into curds and whey.
5.Cut the curd into small 2-3cm pieces and stir gently.
6.Turn on the heat and bring the pot to 40C while stirring gently.
7.Once the curds start to shrink and become firmer, remove pot from heat.
8.Let it cool down to 35C and then add salt and mint. Stir well.
9.Press the cheese mixture into cheesecloth-lined molds until firm.
10.Let it cool and settle for at least 2 hours before serving.
