300 g ready-made shortcrust pastry
200 g caster sugar
1 tablespoon cornflour
300 ml milk
4 egg yolks
25 g butter , diced
1/2 teaspoon vanilla essence
125 g fresh raspberries
50 g sliced almonds
icing sugar , for dusting

Instructions

1.Preheat the oven to 200°C (180°C fan)/390°F/gas mark 6.
2.Roll out the pastry and line a 25 cm tart tin, prick it all over with a fork, and chill in the fridge for 15 minutes.
3.Blind bake for 15 minutes, then remove from the oven and brush with beaten egg yolk.
4.Make the filling by whisking together the sugar and cornflour in a bowl; add the milk and egg yolks while whisking continuously.
5.Pour the mixture into a saucepan and heat while stirring, add butter and vanilla essence and cook for 5-7 minutes until it thickens.
6.Pour custard filling into the cooled tart shell and smooth the top with a palette knife.
7.Arrange the raspberries on top, pressing them into the custard, and sprinkle the almonds.
8.Bake it for 20 minutes until golden, allow to cool, then sprinkle some icing sugar on top.
