Ingredients

1/2 cup basmati rice
1 cup orange lentils
1/2 cup brown lentils
1/4 cup canola oil
1 teaspoon tomato paste
1 tomatoes , chopped
1 onion , chopped
1 carrot , chopped
1 garlic clove , chopped
1/2 teaspoon curry powder
salt & pepper
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/4 teaspoon ginger
Curry Rice With Orange and Brown Lentils is a perfect combination of spices, rice, and lentils that will leave you craving more. Instructions

1.Rinse the orange and brown lentils separately and soak them for three hours.
2.Cook the basmati rice as per package instructions and set aside.
3.In a pan, heat canola oil, add chopped onions, garlic, and tomato paste. Fry them for a minute.
4.Add chopped tomatoes, curry powder, turmeric, cumin, salt, and pepper. Cook for 5 minutes till the tomatoes are soft and mushy.
5.Drain the orange and brown lentils and add them to the tomato mixture.
6.Add two cups of water, cover the mixture and cook on low flame till all the water is absorbed, and lentils are cooked.
7.Once the lentils are cooked, mix the cooked basmati rice very gently into the lentils.
