Ingredients

4 chicken breast fillets
1 cup flour
1 egg
1 tablespoon water
1/3 cup prepared curry paste ( your choice , I like a mild curry )
2 cups breadcrumbs
1 cup vegetable oil
Chicken schnitzel is a beloved dish that originated in Austria and has since spread throughout the world. This recipe gives it an Indian twist with the addition of curry paste. Instructions

1.Preheat oven to 180 degree Celsius.
2.Flatten chicken breasts with a mallet.
3.Put flour in a dish. In another dish, beat egg with water.
4.Spread curry paste over both sides of chicken breasts.
5.Put breadcrumbs into a third dish.
6.Dip chicken into flour, shaking off excess. Then dip into egg mixture. Finally, dip into breadcrumbs, pressing firmly to coat both sides.
7.Heat oil in a non-stick frying pan over medium heat. When oil is hot, put chicken in the pan and cook for 2-3 minutes per side or until golden.
8.Transfer chicken to an ovenproof dish and bake for 8-10 minutes in the preheated oven until cooked through.

The curry crumb coating gives a flavor boost to the plain chicken schnitzel.

The dish is high in calories and fat since it is fried and coated in breadcrumbs.
