1/2 cup sweet red pepper , finely diced

1/4 cup whole wheat flour
1 egg , beaten
plain yogurt ( optional )
fruit chutney , to top ( optional )

Instructions

1.In a large pot, bring 1 cup of water, wild rice, and 1/2 teaspoon of salt to a boil. Cover the pot, reduce heat to low, and let it simmer for 25 minutes.
2.Add 1 and 1/2 cups of water, brown rice, and 1/2 teaspoon of salt to the pot. Cover it again, bring it to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until all the water has been absorbed.
3.In a pan, heat up the vegetable oil over medium heat. Add the green onions, garlic, and sweet red pepper, and sauté for 3-5 minutes, or until the vegetables have softened.
4.Add the curry powder to the pan and cook for another 2-3 minutes.
5.In a mixing bowl, combine the cooked rice, sautéed vegetables, and whole wheat flour. Mix well and let cool for a few minutes.
6.Add the beaten egg to the mixture and stir well. Preheat the oven to 375°F (190°C).
7.Using your hands, shape the rice mixture into 6-8 patties. Place them on a greased baking sheet and bake for 15-20 minutes, or until golden brown.
8.Serve with a dollop of plain yogurt and fruit chutney if desired.
