3 cups whole wheat flour
1 1/2 teaspoons salt
1/3 cup vegetable oil
1 - 1 1/4 cup water
2 large potatoes , peeled
1/2 cup diced onion
2 minced garlic cloves
2 tablespoons fresh gingerroot , grated
1/2 cup green peas
1/2 cup diced carrot
1 teaspoon garam masala
1 tablespoon curry powder
3 cups vegetable oil

Instructions

8.Cut each circle in half to form two semicircles.
9.Take one semicircle and form it into a cone, moistening the straight edge with a little water and pressing the edges together to seal.
10.Fill the cone with some of the potato filling and moisten the top edges of the cone with water. Pinch the edges together, making sure they're completely sealed.
11.Heat the vegetable oil in a deep pan and fry the samosas in batches until they're golden brown. Drain on paper towels.
12.Serve the samosas warm with your favorite dipping sauce.
