Ingredients

2 cups instant couscous
2 cups boiling chicken stock or 2 cups vegetable stock
1 1/2 teaspoons curry powder

1 tablespoon margarine
2 cans tuna in water , flaked & drained
1 red capsicum , diced
1 large carrot , grated
40 g baby rocket
4 spring onions , thinly sliced
2 tablespoons lemon juice
2/3 cup hummus , to serve

Instructions

1.Preheat the oven to 200C/180C fan-forced. Line a large baking tray with baking paper.
2.Place the couscous, boiling chicken or vegetable stock, curry powder, garlic, and margarine in a large bowl. Stir to combine.
3.Cover the bowl with plastic wrap or a lid and let it stand for 5 minutes to allow the couscous to absorb the liquid.
4.Remove the plastic wrap or lid and fluff the couscous with a fork.
5.Add the flaked tuna, diced red capsicum, grated carrot, baby rocket, thinly sliced spring onions, and lemon juice. Toss until well combined.
6.Spoon the couscous mixture onto the prepared baking tray.
7.Bake for 15 minutes or until heated through.
8.Serve the couscous topped with dollops of hummus and scattered with extra rocket leaves, if desired.
