Ingredients

375 g tinned sweetcorn
2 tablespoons cornflour
2 tablespoons plain flour
1 egg , beaten
1/4 teaspoon salt
1 teaspoon curry powder
1/2 teaspoon chili powder
1/4 teaspoon turmeric
1 shallot , chopped
2 tablespoons chopped coriander
vegetable oil ( for deep frying )
4 tablespoons natural yoghurt
1 tablespoon lemon juice
1 tablespoon chopped coriander
1 teaspoon clear honey
1/4 teaspoon garam masala
1/4 teaspoon salt
Curried Sweetcorn Patties are a delicious and easy-to-make snack that pack a spicy flavour punch. Instructions

1.In a bowl, mix the tinned sweetcorn, cornflour, plain flour, beaten egg, salt, curry powder, chili powder, turmeric, chopped shallot and coriander.
2.Preheat the vegetable oil in a deep frying pan on medium-high heat.
3.Using a tablespoon, scoop the mixture and form into small patties.
4.Add the patties to the hot oil and cook until crispy and golden brown.
5.Once the patties are done, remove them from the oil and place them on a paper towel to drain any excess oil.
6.In a bowl, mix the natural yoghurt, lemon juice, chopped coriander, clear honey, garam masala and salt for dipping.
