Ingredients

1 lb butternut squash
2 cups minced onions

Instructions

1.Preheat the oven to 400°F.
2.Peel and dice the butternut squash into small cubes and place on a baking tray.
3.Drizzle 1 tablespoon of oil over the squash and roast in the oven for 20 minutes or until the squash is golden brown.
4.In a large pot, melt the butter or margarine over medium heat.
