Ingredients

4 pounds bone-in beef short ribs
1 pound beef bone marrow
5 tablespoons canola oil , divided
salt and ground black pepper to taste
1 cup minced onion
2 tablespoons ginger garlic paste
2 tablespoons tomato paste
3 tablespoons curry powder
2 tablespoons ground paprika
1/2 cup all-purpose flour
1 carton beef stock
8 allspice berries , or more to taste
2 bay leaves
1 tablespoon garam masala
2 limes , cut into wedges
1 bunch cilantro , chopped , or to taste
2 serrano peppers , sliced into rings , or to taste
1 piece fresh ginger , cut into matchsticks , or to taste
Curried Short Ribs - Nontraditional Nihari is a unique twist on a classic Pakistani dish. In traditional Nihari, lamb shanks or beef shanks are slow-cooked in a rich and spicy tomato-based gravy. This recipe uses bone-in beef short ribs as the main protein and relies on the combination of curry powder, paprika, and garam masala to give the meal its bold flavor. The addition of allspice berries, bay leaves, lime wedges, cilantro, serrano peppers, and fresh ginger provide an extra layer of complexity to the dish. Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.Season beef short ribs and bone marrow with salt and pepper.
3.Heat a large skillet over high heat until hot. Add 3 tablespoons canola oil, short ribs, and bone marrow. Cook until browned, about 8 minutes.
4.Add onion and ginger garlic paste to the skillet and stir to combine with the browned meat.
5.Add tomato paste, curry powder, and paprika and stir to combine with the onion mixture. Cook for 2-3 minutes.
6.Add flour and stir to combine with the mixture of beef and onion. Cook for 1-2 minutes.
7.Pour beef stock into the skillet and stir well. Bring to a boil.
8.Add allspice berries, bay leaves, and remaining 2 tablespoons canola oil to the skillet, stir well, and cover with aluminum foil.
9.Bake in the preheated oven for 2-3 hours until the beef falls off the bone.
10.Remove the skillet from the oven and take out the bones, allspice berries, and bay leaves.
11.Sprinkle garam masala over the beef and stir well.
12.Serve with lime wedges, chopped cilantro, serrano peppers, and fresh ginger.
