Ingredients

500 g pumpkin or 500 g butternut squash
3 slices bacon
2 tablespoons butter
2 onions , finely chopped
2 garlic cloves , minced
1 teaspoon curry powder
1 medium kumara , cut into 5cm/2-inch cubes
2 cups water
extra water , milk or cream , if needed
salt and pepper
Curried Pumpkin, Kumera, and Bacon Soup is the perfect comfort food for colder months. The soup has a rich and creamy texture with a hint of curry powder and crispy bacon squares on top. Instructions

1.Peel and cut pumpkin/butternut into small cubes and set aside.
2.Cut bacon into small squares and fry in a pan on medium heat until crispy. Remove from pan and set aside.
3.In the same pan, melt 2 tablespoons butter and add chopped onions. Fry until onions are translucent and soft.
4.Add minced garlic and curry powder to the onions and fry for another minute.
5.Add pumpkin/butternut cubes, kumara cubes, and 2 cups of water to the pot. Bring to boil on high heat.
6.Reduce heat to low and let simmer for 25-30 minutes or until all the vegetables are soft.
7.Use a stick blender or pour into a blender and blend until smooth and creamy.
8.If the soup is too thick, add extra water, milk, or cream until it reaches your desired consistency.
9.Season with salt and pepper to taste.
10.Serve hot and crispy bacon squares on top of the soup, garnish with parsley or chives.
