Ingredients

1 1/2 inches gingerroot , piece
2 green chilies , minced
1/4 cup unsweetened coconut , shredded

6 medium potatoes , boiled , cubed
1 teaspoon turmeric
1 tablespoon coriander
1 eggplant , cut in 1-inch cubes ( small )
1 teaspoon salt
3 tablespoons fresh coriander , chopped
1 tablespoon lemon juice

Instructions

4.Add the boiled and cubed potatoes and stir fry until they are well coated with the spices.
5.Add turmeric, coriander, and salt. Stir well and continue cooking for 2-3 minutes.
6.Finally, add the cubed eggplant, chopped fresh coriander, and lemon juice. Cover the pan and cook until the eggplant is soft and cooked through.
