Ingredients

1 1/2 cups uncooked basmati rice
3 cups water
4 cups cauliflower florets
4 pork chops , trimmed
1 1/2 teaspoons curry powder
salt and ground black pepper to taste
1 teaspoon olive oil
2 1/2 teaspoons curry powder
2 teaspoons all-purpose flour
1/2 cup low-sodium chicken broth
1/2 cup buttermilk
1/4 cup apple chutney
6 green onions , chopped , divided
Curried Pork Chops and Cauliflower with Basmati Rice is a hearty and flavorful meal that is perfect for dinner. Instructions

1.Rinse the basmati rice in cold water and add to a pot with 3 cups of water. Bring to a boil then reduce heat to a simmer and cover. Cook for 15-20 minutes until the water is absorbed and the rice is tender.
2.In a bowl, toss the cauliflower florets with 1 1/2 teaspoons of curry powder, salt, and pepper. Heat olive oil in a pan over medium-high heat and add cauliflower. Cook for 5-7 minutes until golden and crispy. Transfer to a plate and set aside.
3.Season the pork chops with salt and pepper. In the same pan, heat 2 1/2 teaspoons of curry powder and add the pork chops. Cook for 5-7 minutes on each side until browned and cooked through.
4.Transfer the pork chops to a plate and in the same pan whisk in all-purpose flour and low-sodium chicken broth. Bring to a boil then add buttermilk and apple chutney. Simmer for 5-7 minutes until thickened. Add back the pork chops and cauliflower and heat through. Serve with chopped green onions on top.
