2 cups vegetable broth
1 1/2 cups brown lentils, rinsed
1 14.5-oz can diced tomatoes, undrained
1/2 tsp salt
1/4 tsp black pepper
6 cups fresh spinach, stemmed and chopped
This vegan-friendly dish is a great source of protein and dietary fiber. Spiced with curry powder, it has an earthy and aromatic flavor. Serve it over brown rice or with naan bread.

Instructions

1.Heat oil in a large saucepan over medium heat.
2.Add onion, garlic, and ginger; sauté 5 minutes.

5.Reduce heat, simmer 30 minutes or until lentils are tender.
