Ingredients

2 lbs grouper ( can also use sole , mahi-mahi or other light , non flaky fish )
1/4 cup fresh lemon juice
1 3/4 teaspoons salt
2 garlic cloves
4 teaspoons fresh minced ginger
1 cup coconut milk
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon brown sugar
1/2 teaspoon black pepper
1/4 teaspoon turmeric
1 pinch cayenne pepper
1 -4 jalapeno
1 onion
2 tomatoes
3/4 cup water
1 tablespoon canola oil

Instructions

1.Cut the fish into small bite-sized pieces and place in a bowl. Add the lemon juice and 1 teaspoon of salt and toss to coat. Set the fish aside for at least 15 minutes.
2.In a blender, combine the garlic, ginger, coconut milk, coriander, cumin, brown sugar, black pepper, turmeric, and cayenne pepper. Blend until smooth.
3.Heat the canola oil in a large sauté pan over medium heat. Add the onion and cook until soft, about 5 minutes. Add the blended spice mixture and jalapeno, and cook for 5 minutes, stirring occasionally.
4.Stir in the chopped tomatoes, water, and remaining 3/4 teaspoon of salt. Bring to a simmer and cook for 10 minutes.
5.Add the marinated fish and cook until the fish is cooked through, about 5 minutes. Serve hot with rice or bread.
