Ingredients

2 fryer chickens ( cut up or chicken pieces )
4 medium red onions
1 leek
8 garlic cloves
1/2 cup of freshly grated coconut ( coconut flakes can also do the job )
2 tablespoons curry
1 tablespoon turmeric
1 tablespoon ground allspice
1/2 pint sour cream
2 tablespoons plain flour
1 tablespoon butter
1 bouquet garni ( thyme , rosemary , parsley , bay leaf )
2 pints chicken stock
2 cups of drained black beans ( also called turtle beans )
2 fresh chili peppers , chopped up finely
2 limes ( the juice of )
salt & pepper
This chicken and black bean curry is a fusion of Creole and Indian flavors, with coconut milk and spices playing starring roles. The dish is hearty and filling, with tender chicken and rich black beans in a creamy coconut and curry sauce. Instructions

1.Season the chicken with salt and pepper on both sides.
2.Heat a large frying pan over medium-high heat and add the chicken pieces, cooking until browned on both sides.
3.Remove the chicken from the pan and set aside.
4.In the same pan, add the onions, leek, garlic, and chili peppers and cook until they begin to soften.
5.Add the curry powder, turmeric, and allspice and stir until fragrant.
6.Stir in the chicken stock and coconut, and add the bouquet garni.
7.Add the chicken back to the pan, reduce the heat, and simmer for 25-30 minutes.
8.Mix the flour with 2 tablespoons of cold water and whisk until smooth. Stir in the sour cream and pour the mixture into the pan, stirring constantly until the sauce thickens. Discard the bouquet garni.
9.Stir in the black beans and lime juice, and season with salt and pepper as needed. Serve hot.
