Ingredients

2 cups reduced-sodium chicken broth
2 medium tart apples , peeled , cored and chopped

Instructions

4.On a baking sheet, place the bell pepper, skin-side up. Roast in the oven until the skin chars, about 15 minutes.
5.Remove the bell pepper from the oven and let it cool. Peel the charred skin off and discard.
6.In a blender, puree the buttermilk, lime juice, and roasted bell pepper until smooth.
7.Add the pureed mixture to the soup and stir in the corn niblets, fresh cilantro, and baby shrimp. Heat through over medium heat, stirring occasionally. Do not boil.
8.Garnish with additional cilantro if desired and serve hot.
