Ingredients

2 cups all-purpose flour , plus more for rolling
3 tablespoons sugar
1 1/2 tablespoons garam masala
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons cold unsalted butter , cut into 1/2-inch pieces
3/4 cup buttermilk , plus more for brushing
1 carrot , coarsely chopped
1 onion , coarsely chopped
1 teaspoon black peppercorns
1 bay leaf
4 lbs chicken breast halves , on the bone , with skin
1 cup mayonnaise , plus more for spreading
1 tablespoon curry powder
1 tablespoon fresh lime juice
3 cups red grapes , halved ( about 14 ounces )
2 celery ribs , preferably from the heart , finely diced
2 tablespoons chopped cilantro
1/4 cup shelled pistachios , toasted ( see Note )
salt & freshly ground black pepper

Instructions

1.Preheat your oven to 400°F.
2.In a large bowl whisk together flour, sugar, garam masala, baking powder, salt, and baking soda.
3.Add in cold butter and with the help of a pastry cutter or your fingers, cut in the butter until it resembles coarse meal.
4.Make a well in the center and pour in buttermilk.
5.Using a fork, stir together the flour mixture until a shaggy dough forms.
6.Turn dough out onto a lightly floured surface and knead gently until it comes together and is smooth.
7.Roll out dough to 1/2 inch thickness, then lightly dust the dough with flour and fold it in half or thirds.
8.Cut the dough into rounds using a biscuit cutter and place them on a baking sheet lined with parchment paper.
9.Brush the tops of the biscuits with buttermilk and bake for 12–15 minutes until lightly golden.
10.Cut vegetables such as carrots and onions into small pieces; in a large pot, place chopped vegetables, peppercorns, bay leaf then add chicken and enough water to cover the chicken.
11.Bring it to a boil and then reduce heat to a gentle simmer for 30-35 minutes until the chicken is cooked through.
12.Remove chicken from the pot and let it cool for 10 minutes.
13.Remove the skin and bones from the chicken and cut the meat into cubes.
14.In a small bowl, mix mayonnaise, curry powder, and lime juice.
15.In a large bowl, combine the chicken, mayonnaise mixture, grapes, celery, cilantro, and salt and pepper.
16.Serve the chicken salad with warm garam masala biscuits and shelled pistachios on the top.
