Ingredients

1 cup medium grain brown rice
2 cups water
1/4 cup dried apricot , diced
2 teaspoons salt
1/2 lb jumbo shrimp , peeled and deveined
1 lb boneless chicken breast , cut into bite size pieces
1 teaspoon black pepper
4 teaspoons canola oil
1 small onion , minced
1 clove garlic , minced
1 tablespoon gingerroot , minced
1 1/2 teaspoons Madras curry powder
1 1/2 cups chicken broth
1 teaspoon cornstarch
3/4 cup coconut milk
1 tablespoon cilantro , chopped ( optional )
bottled chutney sauce ( Major Greys is great )
Curried Chicken and Shrimp with Apricot Brown Rice is a flavorful and healthy dish that pairs tender pieces of chicken and shrimp with fragrant curry spices and delicious apricot brown rice. Instructions

1.In a medium saucepan, bring the water to a boil. Add rice, apricots, and 1 teaspoon of salt. Cover and reduce heat. Cook for 35 to 40 minutes or until rice is tender and liquid is absorbed.
2.In a large skillet over high heat, add 2 teaspoons of oil. Add shrimp and chicken to the skillet and sprinkle with black pepper. Cook for 4 to 5 minutes or until golden brown. Remove the shrimp and chicken from the skillet.
3.In the same skillet over medium heat, add the remaining 2 teaspoons of oil. Add onion, garlic, gingerroot, and curry powder. Cook for 2 minutes or until fragrant. Add chicken broth and heat to boiling.
4.In a separate bowl, whisk cornstarch and coconut milk. Add the mixture to the skillet. Heat to boiling, whisking constantly. Reduce heat and simmer for 3 minutes.
5.Return the shrimp and chicken to the skillet and cook for an additional 2 minutes or until heated through. Serve with the rice and sprinkle with cilantro. Top with chutney sauce.
