1 head cauliflower , cut into small florets
3 large mushrooms , in 1/8 inch slices
6 -8 grape tomatoes
2 garlic cloves , crushed and finely chopped
salt
cumin
madras curry
garam masala
black pepper

Instructions

1.Heat vegetable oil in a pan and add crushed garlic and sliced mushrooms.
2.Cook on medium heat until golden brown in colour and then add salt, cumin, madras curry, garam masala and black pepper.
3.Add cauliflower florets and stir to coat with spices. Continue cooking on medium heat for 5-7 minutes with lid.
4.Add sliced grape tomatoes and stir to combine, and cook for another 1-2 minutes until all vegetables are tender.
5.Serve with freshly chopped cilantro on top.
