1 brown onion , thinly sliced
2 tablespoons mild curry powder
500 g beef mince
400 g diced tomatoes
500 g desiree potatoes , peeled , chopped
100 g sour cream
2 green onions , thinly sliced

Instructions

1.Heat olive oil in a large saucepan over medium-high heat.
2.Add onion and cook for 2-3 minutes or until softened.
3.Add curry powder and cook for a further 1-2 minutes or until fragrant.
4.Add beef mince and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until the beef is browned.
5.Stir in diced tomatoes, potatoes, and 1 cup (250ml) water. Bring to the boil.
6.Reduce heat to medium-low, cover and cook for 30 minutes or until the potatoes are tender and the mixture is thick.
7.Ladle beef mixture into bowls and top with sour cream and green onions.
