Ingredients

1 pint milk
1/2 onion , large dice
2 teaspoons whole cloves
1 whole nutmeg , broken
1 tablespoon curry powder
1 ounce clarified butter
1 ounce flour
1 egg yolk
1/4 cup creme fraiche
2 tablespoons sherry wine
1/8 teaspoon salt , to taste
1/8 teaspoon white pepper , to taste
1/2 teaspoon turmeric
1/2 teaspoon cayenne pepper , to taste
1/8 teaspoon paprika
Curried Béchamel, also known as the Curry Sauce, is a variation of the French Bechamel sauce, a combination of butter, flour, and milk. Instructions

1.In a saucepan, heat the milk over medium heat along with the diced onions, whole cloves, and broken nutmeg for 5-10 minutes until hot.
2.Strain the spices and onion from the milk and put it back on low heat.
3.In a separate saucepan over medium heat, gently brown the clarified butter and flour, stirring constantly to avoid lumps.
4.Gradually pour in the hot milk, whisking constantly to prevent lumps.
5.Add curry powder, turmeric, cayenne pepper, paprika, salt and white pepper, stirring constantly until the sauce thickens.
6.Remove the pan from heat and add the beaten egg yolk, then add the creme fraiche and sherry wine while stirring. The sauce is now ready!
