1 cup unsweetened coconut milk
3 tablespoons dried sweetened coconut ( optional )
1 cup whole milk
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon pure vanilla extract
1/8 teaspoon cinnamon ( plus more , for top )

Instructions

1.In a blender, pulse the corn until it’s coarsely pureed.
2.In a medium-sized saucepan, combine coconut milk, whole milk, sugar, and salt. Add pureed corn, cobs, and dried sweetened coconut (optional).
3.Cook over medium-low heat, and stir continuously until the mixture is hot but not boiling, approx 8 minutes.
4.Whisk cornstarch with a tablespoon of cold water. Add it to the pan and mix well.
5.Cook pudding for another 15 minutes or until thick>
6.Remove from heat, add vanilla, and stir
7.Let it cool, and serve topped with cinnamon. Enjoy!
