Ingredients

1 1/4 cups sugar
1/2 cup melted margarine
2 medium free range eggs
2 1/3 cups self raising flour ( cake flour )
6 -9 tablespoons best quality unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
1 cup milk , mixed with
1 teaspoon vinegar
2 tablespoons red food coloring
1 teaspoon vinegar
300 ml whipped cream or 500 ml squirty cream
cocoa ( optional ) or candy sprinkles ( optional )

Instructions

1.Preheat the oven to 180°C.
2.In a large mixing bowl, beat the melted margarine and sugar together until light and fluffy. Add eggs one at a time and beat well.
3.Sift the self raising flour, baking powder, cream of tartar, salt and cocoa powder into the mixing bowl, then beat until well combined.
4.Add the milk mixed with vinegar and red food coloring to the mixing bowl and beat until all ingredients are well combined.
5.Arrange cake cups in a muffin tray, fill each cup with the mixture until 2/3 full.
6.Transfer the tray to the oven and bake for 20-25 minutes. Once cooked, remove the cupcakes from the oven and let them cool completely.
7.When the cupcakes have cooled down, cut off the tops gently with a sharp knife and set aside.
8.Add the whipped cream or squirty cream to the mixing bowl and beat until well thickened. Fill each cupcake with the cream, then arrange the top of the cupcake back with a slight pressure.
