Ingredients

8 ears corn , husks and silks removed
canola oil , for brushing
kosher salt & freshly ground black pepper
3 poblano peppers , charred on a grill
1 cup Mexican crema ( I used sour cream )
1 1/2 teaspoons agave nectar ( I used honey )
1 cup crumbled Cotija cheese ( I used feta )
1/4 cup fresh cilantro leaves , chopped , plus additional for garnish
2 limes , juice of
kosher salt & freshly ground black pepper
Cup A'Elotes is a grilled corn dish that is popular in Mexico. It is a variation of the classic street food, elote, which is grilled corn on the cob topped with a mixture of mayonnaise, cotija cheese, chili powder, and lime juice. Instructions

1.Preheat grill to medium-high heat.
2.Brush corn with canola oil and sprinkle with salt and pepper.
3.Grill corn for 10-15 minutes, turning occasionally, until charred and tender.
4.Set corn aside to cool.
5.Char poblano peppers on grill until blackened on all sides.
6.Transfer peppers to a bowl and cover with plastic wrap for 15-20 minutes.
7.Peel the peppers and remove the seeds and stems.
8.Finely chop the peppers and mix with crema, agave nectar, feta cheese, cilantro, lime juice, salt, and pepper.
9.Cut corn kernels off the cob and mix with the pepper mixture.
10.Spoon mixture into small cups and garnish with additional cilantro leaves.
