2 corn cobs , trimmed
1/3 cup coriander , chopped coarsely
1 small red capsicum , chopped finely
3 green onions , chopped finely
2 tablespoons lime juice
300 g firm white fish fillets
1 teaspoon ground cumin

Instructions

1.Preheat oven to 200°C/180°C fan-forced.
2.Line an oven tray with baking paper.
3.Place corn on the prepared tray. Spray with oil. Roast for 25 minutes or until tender. Cool slightly.
4.Meanwhile, combine coriander, capsicum, onion and 1 tablespoon lime juice in a bowl. Season. Set salsa aside.
5.Heat a non-stick frying pan over medium-high heat.
6.Sprinkle fish with cumin. Spray both sides of fish with oil. Cook fish for 2-3 minutes each side or until browned and cooked through.
7.Combine remaining lime juice and 1 tablespoon water in a small jug.
8.Divide fish and corn between plates. Drizzle with lime mixture and top with salsa.
