2 teaspoons cumin seeds
225 g spinach leaves
1 tablespoon hot curry paste
2 cans chickpeas , drained
2 tablespoons crunchy peanut butter
25 g fresh white breadcrumbs
salt & freshly ground black pepper
vegetable oil , for shallow oil
hamburger buns or salad greens , to serve

Instructions

1.In a large frying pan heat oil and add the onion cook, stirring frequently for 5 minutes over medium temperature.
2.Add cumin seeds, cook for 1 minute and stir occasionally. Add the spinach and cook until wilted, for about 2 minutes.
3.Add the hot curry paste and cook for 1 minute while stirring constantly. Remove from heat.
4.In a food processor, pulse chickpeas, peanut butter, and breadcrumbs. Mix until smooth. Transfer the chickpea mixture to a bowl and add the cooked spinach, onion, salt, and pepper.
5.Mix well until no chunks can be seen. Shape into 4-6 burgers and chill in the fridge for 2-3 hours.
6.Heat the vegetable oil in a shallow pan over medium heat. Cook each burger for 5 minutes per side or until golden.
