Ingredients

1 1/2 cups pecans
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup unsalted butter , chilled
2 large eggs , yolks and whites separated
4 tablespoons ice water ( less may be needed )
3/4 cup pineapple preserves
1 cup powdered sugar , sifted
Cuernitos De Mermelada, also known as jam croissants, is a popular pastry in Mexico. These crescent-shaped pastries are filled with pineapple preserves and toasted pecans and are perfect for a delicious morning meal or a delightful afternoon snack. This pastry is an excellent choice for those who love both sweet and savory foods. Traditionally served with a cup of coffee, these pastries are sure to please. The taste of these pastries is often described as a cross between a croissant and a danish, making it a crowd-pleaser for any occasion.

Instructions

1.Preheat the oven to 375°F (190°C).
2.Spread the pecans out on a baking sheet and toast them in the preheated oven for 8-10 minutes or until fragrant.
3.In a large bowl, whisk together the all-purpose flour and salt.
4.Using a pastry cutter or your hands, cut the chilled unsalted butter into the flour mixture until the mixture resembles coarse crumbs.
5.In a separate bowl, whisk together the egg yolks and 2 tablespoons of ice water.
6.Gradually mix the egg yolk mixture into the flour mixture until the dough comes together.
7.Divide the dough into 2 pieces, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
8.Remove the dough from the refrigerator and roll it out into 2 circles (each about 14 inches in diameter).
9.Spread the pineapple preserves over the dough circles, leaving a 1-inch border around the edges.
10.Sprinkle the toasted pecans over the preserves.
11.Cut each dough circle into 12 triangles (like pizza slices).
12.Roll up each triangle, starting from the wide end, to form a crescent shape.
13.Place the crescents on 2 parchment-lined baking sheets.
14.Beat the egg whites with a fork until frothy and brush the egg whites over the crescents.
15.Bake the crescents in the preheated oven for 20-25 minutes or until golden brown.
16.Allow the crescents to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
17.Dust the crescents with sifted powdered sugar before serving.
