2 garlic cloves , finely diced
2 tablespoons creamy basil pesto
1 tablespoon whole mustard seeds
cheese , to sprinkle ( preferably parmesan )
butchers kitchen twine , for meat
3 baking potatoes , cut into chunks par cooked
vegetables , of your choice

Instructions

1.Preheat the oven to 200C / fan 180C / gas mark 6.
2.Season the rump steak with salt and pepper.
3.In a pan, heat some oil over medium-high heat and sear the steak for about 2-3 minutes on each side until it is browned.
4.Remove from the heat and let it rest for a few minutes before adding the pesto, mustard seeds and garlic onto the steak.
5.Roll the steak and tie it with butcher's twine to form a roulade.
6.Bake the roulade in the oven for about 15-20 minutes and then let it rest for a few minutes before slicing it.
7.In a separate roasting tray, toss the par-cooked potatoes with some oil, salt, pepper and any other desired spices. Place them in the oven for about 25 minutes at the same temperature as the steak.
8.Serve the sliced steak with the roasted potatoes and steamed vegetables of your choice.
