8 low-fat flour tortillas
1/4 cup yellow mustard
4 ounces thinly sliced black forest ham
8 slices sandwich-cut dill pickles
4 ounces thinly sliced roast pork , from the deli
4 ounces thinly sliced part-skim swiss cheese
Cubano Quesadillas are a tasty fusion of two classic cuisines, Cuban and Mexican, that results in a deliciously unique dish. Instructions

1.Spread yellow mustard on 4 of the tortillas.
2.Layer each tortilla with 1 ounce of black forest ham, 2 slices of pickles, 1 ounce of roasted pork, and 1 ounce of swiss cheese.
3.Top each with a second tortilla.
4.Heat a large nonstick skillet over medium heat. Coat the pan with cooking spray.
5.Add 1 quesadilla to the pan and cook for approximately 2-3 minutes per side or until the cheese is melted and the tortilla is golden brown.
6.Repeat with the remaining quesadillas.
7.Cut each quesadilla into quarters and serve immediately.
