6 boneless skinless chicken breast halves
1 medium onion , chopped
1/2 cup seeded and chopped green bell pepper
1 jar red currant jelly
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 1/2 teaspoons Tabasco sauce
1 1/2 cups seeded and diced plum tomatoes
1/3 cup pimento stuffed olive , chopped
2 tablespoons currants
2 tablespoons capers , drained
2 tablespoons chopped fresh basil
2 sprigs basil
lemon wedge ( to garnish )

Instructions

1.Preheat oven to 375°F.
2.Combine Jamaican Caribbean Jerk seasoning, cumin, paprika, and 2 tablespoons of olive oil in a small dish and mix well.
3.Rub seasoning mixture over chicken and set aside.
4.Heat a large ovenproof skillet over medium-high heat; add remaining olive oil.
5.Add chicken to skillet and sauté for 4 minutes on each side or until browned.
6.Transfer skillet to preheated oven and bake for 10 minutes to cook through.
7.Meanwhile, prepare the Spicy Currant Picadillo: In a medium saucepan, sauté chopped onion and bell pepper over medium heat for 5 minutes or until soft.
8.Add red currant jelly, Worcestershire sauce, apple cider vinegar, Tabasco sauce, and diced tomatoes to the saucepan and stir to combine.
9.Simmer for 10 minutes until slightly thickened.
10.Stir in chopped olives, currants, capers, and chopped basil.
11.To serve, spoon picadillo over chicken and garnish with a sprig of fresh basil and a lemon wedge on the side.
