Ingredients

4 cups long grain rice
8 cups water
1 small onion , minced
2 teaspoons salt
1/8 teaspoon annatto powder
1/8 teaspoon paprika
black pepper to taste
1 cup frozen peas , thawed
1 jar sliced pimento peppers , for garnish

Instructions

1.Rinse the rice in a fine mesh strainer and set aside.
2.In a large pot, bring the water, onion, salt, annatto powder, paprika, and black pepper to a boil.

4.Cook the rice for 20 minutes, or until all the water has been absorbed and the rice is tender.
5.Remove from heat and let sit for 5 minutes.
6.Fluff the rice with a fork and stir in the thawed peas.
7.Arrange the sliced pimento peppers on top of the rice for garnish.
