Ingredients

3 cups cooked white rice
1 lb dried black beans
1 small onion , cut in half
4 garlic cloves , peeled and cut in half
2 bay leaves
1/2 green bell pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
2 slices bacon , cooked and crumbled
1 tablespoon olive oil
1/2 small white onion , finely minced
2 garlic cloves , minced
1/2 green bell pepper , cored , seeded , and finely chopped
3 scallions , trimmed and finely sliced
2 tablespoons dry white wine
1 tablespoon red wine vinegar
1/2 teaspoon sugar
salt
fresh ground black pepper , to taste
lime wedge ( to garnish )
Cuban-Style Cristianos Y Moros (Congri) is a traditional Cuban dish made of dried black beans and white rice. The dish is also known as 'Moros y Cristianos' or 'Moors and Christians' in Spanish, which represents the black beans (Moors) and the white rice (Christians). Congri is a popular side dish in Cuba, but it can also be a main course by itself. The recipe is simple to make, and it's a tasty and filling meal.

Instructions

1.Rinse black beans in running water and transfer them to a large pot.
2.Add onion, garlic, bay leaves, green bell pepper, cumin and oregano, and water to the pot.
3.Bring the mixture to a boil, then reduce heat to medium and let it simmer for about 2 hours or until the beans are tender.
4.Remove the onion, garlic, bay leaves and green bell pepper, and discard.
5.In a skillet over medium heat, add olive oil, white onion, garlic, green bell pepper and scallions. Sauté for about 5 minutes.
6.Stir in white wine, vinegar and sugar. Simmer for about 1-2 minutes or until reduced slightly.
7.Add the crumbled bacon and the cooked rice to the skillet. Mix everything together.
8.Add the cooked black beans to the skillet, and mix them with the rice.
9.Season with salt and pepper to taste.
10.Garnish with lime wedges and serve hot.
