Ingredients

1 tablespoon olive oil or 1 tablespoon vegetable oil
2 slices bacon , chopped
1 small white onion , chopped
1 small green bell pepper , chopped
2 3/4 cups chicken broth
1 1/2 cups white rice
2 pinches saffron or 1/2 teaspoon turmeric
salt
2 pork tenderloin , trimmed , about 2 1/2 lbs
4 garlic cloves , cracked away from skin
4 bay leaves
2 teaspoons anise seed
2 teaspoons ground coriander
1 tablespoon ground cumin
2 limes , zest of
2 tablespoons McCormick grill seasoning ( recommend ( McCormick Montreal Steak Seasoning )
extra virgin olive oil or vegetable oil , to coat
This recipe means enjoying the classic Caribbean flavors that everyone will be looking forward to. This dish serves both the protein and rice component that will leave you satisfied and nothing can beat its flavors. We have used the McCormick grill seasoning to enhance the taste further and it will become a great addition to your dinner rotation.

Instructions

1.Preheat the oven to 425°F.
2.In a pot, heat the olive oil or vegetable oil over medium-high heat. Add the bacon and cook until crisp. Remove the bacon and set aside.
3.In the same pot, cook the onion and green pepper until softened, then add the rice and stir until coated in the oil. Add the saffron or turmeric and stir until evenly distributed.
4.Add the chicken broth and a half teaspoon of salt, then bring to a boil. Once boiling, reduce the heat to low and cover with a tight-fitting lid. Cook for 18 minutes or until the liquid is absorbed and the rice is tender.
5.Meanwhile, in a small bowl, mix the anise seed, cumin, coriander, lime zest, and grill seasoning. Rub the pork tenderloin with extra-virgin olive oil or vegetable oil, and coat evenly with the spice mixture.
6.Heat a large, oven-safe skillet over medium-high heat. Add the pork tenderloin and sear on each side until golden brown, about 2 minutes per side. Add garlic and bay leaves, then transfer the skillet to the oven.
7.Roast the pork in the oven until it reaches an internal temperature of 145°F, about 20-25 minutes. Remove from oven, tent with foil and let rest for 3-4 minutes before slicing.
8.Serve the pork tenderloin slices over the rice and garnish with cooked bacon.
