Cuban shredded pork, also known as ropa vieja, is a classic dish that originated in the Canary Islands and was brought to Cuba by Spanish settlers. It is made by simmering pork in a flavorful broth for several hours until it is tender enough to be shredded. The shredded pork is then sautéed with onions, garlic, and fresh herbs for added flavor. This dish can be served in a variety of ways, including on a bed of rice, with warm tortillas, or on top of a salad.

Instructions

1.In a large pot, add the pork chops, water, lime juice, thyme, peppercorns, garlic powder, onion powder, and salt. Bring to a boil and then reduce the heat to low. Cover and let the pork simmer for 2-3 hours or until it is tender.
2.Remove the pork chops from the pot and let cool slightly. Once cool enough to handle, shred the pork using two forks or your hands.
3.In a large pan, heat the olive oil over medium-high heat. Add the sliced onion and garlic, and sauté until the onions are soft and translucent.
4.Add the shredded pork to the pan and cook until it is heated through. Squeeze the lime juice over the pork and sprinkle with fresh cilantro.
5.Serve the Cuban shredded pork on a bed of rice or with warm tortillas.
