1 1/2 teaspoons grated lime zest plus 1 tablespoon juice

Instructions

1.Adjust oven rack to lower-middle position. Preheat oven to 325°F.

4.Add onion to the pot and cook, stirring occasionally, until it begins to brown, about 5 minutes. Add garlic and cumin and cook until fragrant.
5.Add dry sherry and 1 cups water, scraping the bottom of the pot to loosen the browned bits. Add orange juice and lime zest, stirring to combine.
6.Return beef and any accumulated juices to pot, making sure meat is covered with liquid. Cover pot and transfer to oven. Cook until tender, about 2 hours.
7.Using large slotted spoon, transfer beef to the large bowl; set aside.
8.Strain cooking liquid through a fine-meshed strainer into a fatseparator or a large measuring cup. Let sit for 5 minutes, then skim fat from surface. Add additional water to the skillet to bring the liquid up to 2 cups. Add the strained liquid to skillet and bring to a simmer over medium-high heat.
9.Shred the beef using 2 forks and return to the skillet with the sauce. Simmer until beef is heated through and sauce is slightly thickened, about 5 minutes.
10.Stir in lime juice, season with salt and black pepper, and serve with lime wedges.
