2 pork tenderloin , butterflied and pounded thin

3 cups fresh cuban bread cubes
1 cup milk
2 tablespoons fresh parsley
2 teaspoons minced garlic
1 1/2 cups grated swiss cheese
16 thin dill pickle slices
8 slices provolone cheese
16 slices of baked ham
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup olive oil
1/4 cup white wine vinegar
1 tablespoon shallot , fine chopped
1 1/2 tablespoons Dijon mustard
3 tablespoons heavy cream
2 teaspoons lemon juice ( fresh )
1/4 teaspoon dried oregano
1 pinch sugar

The Cuban Sammy Stuffed Pork Loin is a delicious and indulgent main dish that draws inspiration from the classic Cuban sandwich. This recipe takes the flavors of the sandwich - pork, ham, swiss cheese, pickles, and mustard - and elevates them by stuffing them into tender pork tenderloin, along with a savory bread stuffing. Instructions

1.Preheat the oven to 350°F (180°C).
2.Season the butterflied pork tenderloin with salt and pepper.

9.Spoon the bread stuffing mixture on top of the ham and cheese, spreading it evenly across both tenderloins.
10.Roll up the tenderloins tightly, tucking in the stuffing as you go.
11.Season the outside of the rolled tenderloins with salt and pepper.
12.Place the rolled tenderloins in a baking dish, and bake for 30-40 minutes, or until the internal temperature reaches 145°F (63°C).
13.Allow the stuffed pork loin to rest for 5-10 minutes before slicing.
14.Meanwhile, make the mustard vinaigrette. In a small bowl, whisk together 3/4 cup of olive oil, white wine vinegar, shallot, Dijon mustard, heavy cream, lemon juice, dried oregano, sugar, salt, and pepper.
15.Serve the sliced stuffed pork loin with the mustard vinaigrette drizzled on top.
