1 pork roast , trimmed of fat

1/4 cup red wine
2 tablespoons light tasting olive oil , plus
1/4 cup light tasting olive oil
1 medium yellow onion , sliced and separated into 1/4 inch thick rings

Instructions

1.Preheat the oven to 375°F.
2.Rub the pork roast all over with the grated garlic and sprinkle with the oregano, salt, and pepper.
3.In a bowl or large measuring cup, whisk together the orange juice, lime juice, blood orange juice (if using), red wine, and 2 tablespoons of the olive oil.
4.Place the sliced onion in the bottom of a roasting pan and place the pork roast on top of the onion slices.
5.Pour the orange juice mixture over the pork roast.
6.Roast the pork in the preheated oven for 2 hours, or until it registers 160°F on a meat thermometer.
7.Let the pork rest for 10 minutes before slicing and serving with the mojo criollo sauce on the side.
