Ingredients

140 g cold butter
250 g plain flour
100 g icing sugar
250 g guava paste ( available through http www.cubancuisine.co.uk )
5 tablespoons fine cornflour
1 lime , juice of
50 g sugar
85 g butter , cut into small cubes
3 egg yolks
1 whole egg
5 egg whites
250 g sugar
3 teaspoons cornflour
Cuban Guava and Lime Meringue Pie is a mouth-watering pie that will have everyone coming back for seconds. The unique flavour of guava paste combined with zesty lime makes this pie one of a kind. Instructions

1.Preheat the oven to 190C/fan 170C/gas 5.
2.Rub together the flour, butter and icing sugar until the mixture is crumbly. Press it down into a 20cm pie dish. Bake for 10 minutes until pale golden.
3.Meanwhile, heat the guava paste in a pan with 6 tablespoons of water, stirring until it melts down. Mix 5 tablespoons of fine cornflour with 2 tablespoons of cold water to make a paste.
4.Add the cornflour paste to the guava pan, and stir until the mixture thickens. Remove from the heat and stir in the lime juice, sugar and butter. Cool before whisking in the egg yolks.
5.Beat 5 egg whites until stiff and gradually whisk in 250g sugar and 3 teaspoons of cornflour. Continue to whisk until the mixture becomes thick and glossy.
6.Pour the guava mixture into the baked pastry case and top with the meringue.
7.Bake at 180C for 15 minutes until the meringue is golden brown.
